HUGE raw collard leaf, 1/4 block uncooked tofu mashed with half an avocado and spicy zucchini hummus. Add in sliced raw portabella mushrooms, raw red onions. Sprinkle with turmeric and black salt. Excuse the mess in the background and just imagine how delicious this was.

That looks incredible. I really need more raw in my diet. Winter skews me toward the cooked side. Good reminder.
ReplyDeleteWell, I guess the tofu isn't raw but close enough!
DeleteWould the comment section of your high-raw post be an inappropriate time to ask if you're going to the Vegan Bake-Off?
ReplyDeleteI wouldn't expect anything less. And, yes, it's on 3 of my calendars!
DeleteNice! I'll be there with some friends and B from Gone Pie ;-)
Delete::droooool:: This looks amazing. Minus the red onions. I can't do those things raw. : /
ReplyDeleteI like em raw; I can't say other people like to be around me when I eat them though.
DeleteWhere's the hot sauce? Wait a minute, is hot sauce raw?! I guess there's always chillis for the raw heat.
ReplyDeleteWhich one would win if raw and cooked had an arm wrestle?
Ah! Good point! Well, the hummus was kinda spicy but this definitely could have used some salsa!
DeleteI try not to take sides on raw v. cooked but probably raw because once you cook vegetables they get all weak and droopy.
NOM! That looks good :) x
ReplyDeleteThank you! It was.
DeleteBrilliant!! I never would have thought of doing a raw breakfast burrito. Beautiful meal!
ReplyDeleteWell now you can think about it all the time!
DeleteSo we're supposed to ignore the mess in the background and just focus on the mess in the foreground?
ReplyDeleteYes, exactly. The foreground is more edible.
DeleteThis looks really delicious and a good way to start the day!
